Okra curry (Bhindi curry)

Okra is a plant belonging to the Malvaceae family, known primarily for its edible green pods. Okra is considered to originate in West Africa, Ethiopia, or South Asia. Okra has been known as a food plant since the 13th century. Okra pods release a sticky juice during cooking, which contains a wide range of soluble fiber. Okra is used in stews, salads and is also acidified.
In Indian cuisine, okra is a so-called farm food. I wanted to make food from okra for many years and now I have made it. Since I couldn’t get fresh okra, I made Indian food from canned and slightly acidified okra.
The result was a nice, spicy fully vegetarian curry that is suitable to eat with rice, an Indian flatbread, or without any additives.

Preparation time: 15 min preparation, 20-30 min stewing

Serves: four

Ingredients:
600 g okra pods or 800 g jar of pickled canned okra
1 larger onion, chopped
6 coarsely crushed garlic cloves
3 medium tomatoes
1 cup dilute tamarind water (optional)
A handful of freshly chopped coriander leaves
1 teaspoon brown mustard seeds
1 teaspoon whole cumin
1 teaspoon of lentil seeds
0.5 teaspoons of turmeric
2 teaspoons ground coriander
1.5 teaspoons strong red chili powder
salt to taste
one 400 ml jar of coconut milk
cooking oil for frying spices and onions and garlic

Preparation:
1. Put the oil in a thick-bottomed pot over medium heat, add the mustard and cumin, and fenugreek seeds.
2. Chop the onion and coarsely chop the garlic, add to the spices and fry until the onion has become glassy
3. Chop the tomato coarsely, add to the food, add the chili, coriander, turmeric, salt, and light tamarind water (if desired).
4. Bring to a boil and cook until the food thickens slightly. Add coconut milk, mix and let the food thicken slightly.
5. If you use raw okra, fry it for a few minutes on medium heat. In the case of conservatives, this is not necessary. Add okra to the sauce, stir and cook for about 5 minutes to even out the flavors.
6. Chop coriander leaves and add to food, shake some coriander leaves on food.
Serve with flatbread or rice.
