Cornish fairings

Classic spicy, sweet biscuits from the Cornwall region of England. The history of these cookies is not entirely clear, but similar cookies were likely made and eaten sometimes at the beginning of the 19th century. They are said to be cookies that men gave to their loved ones. These are ginger cookies that contain several spices that can be found in British pudding sauce: nutmeg, cloves, cinnamon, and coriander. Sugar and golden syrup are used as sweeteners. These cookies taste like they’re pretty healthy, despite the high sugar content. In any case, for those who like ginger and a little Christmas spice, these cookies are exactly the right choice.

Ingredients:
450 g wheat flour
2 tablespoons of baking powder
4 tsp pudding spice
3 teaspoons of ground cinnamon
6 teaspoons of ground ginger
0.5 teaspoon of sea salt
240 g of butter
240 g of sugar
2 teaspoons of vanilla sugar
10 tablespoons of golden syrup

Preparation:

  1. Mix all the ingredients in a large bowl. Pudding spice composition: 2 tablespoons cinnamon, 1 teaspoon ginger, 1 tablespoon nutmeg, 0.5 teaspoon nutmeg, 1 teaspoon cloves, 1 teaspoon allspice, 1 teaspoon coriander seeds, grind all components and use in puddings and cookies.
  2. The resulting dough is dry and sand-like. Knead the dough until it starts to hold together like sand cakes.
  3. Shape the dough into balls with a diameter of 2.5 cm and place them on a baking sheet lined with baking paper. Leave gaps between the balls to allow the cookies to expand and spread.
  4. Bake at 180 degrees C for 10-12 minutes. When baking, the surface of the cookies crumbles, typical of this type of cookie.
  5. Cool for 5 minutes before removing the cookies from the pan. A great addition to evening tea drinking.
