Lemon cookies

Crispy, chewy inside, lemon-flavored cookies perfect for both morning coffee and afternoon tea.

Ingredients:
120 g butter in room temperature
1 large egg
190 g wheat flour
1 teaspoon of baking powder
1 teaspoon of vanilla sugar
A pinch of sea salt
Finely grated peel of one lemon
Juice of one medium lemon
200 g of granulated sugar

Icing sugar for decoration

Preparation:

  1. Mix the butter, sugar, and vanilla sugar until fluffy.
  2. Add the egg and mix for additional few minutes.
  3. Add flour, baking powder, finely grated lemon peel, and lemon juice
  4. The dough is relatively soft and not easy to shape. You can do it in two ways, either let the dough stand properly (at least an hour) at +4 degrees C and then form balls about 2 cm in size or use a piping bag and lift the warm dough into the bag and drop balls about 2 cm in diameter onto a baking sheet covered with baking paper.
  5. Bake at 180 degrees C for 9-10 minutes until the cookies start very slightly to the edges. Do not bake longer, otherwise, the cookies will not be soft enough.
  6. Take the pan out of the oven and let it cool for a few minutes remove the cookies carefully with a knife or cake spatula and place on a cutting board or wire rack to cool.
    If you wish, sprinkle powdered sugar on the cooled cookies and serve.
    Cookies can be stored in an airtight jar for a week or two.
