Breaded perch roe
In many countries, fish roe is eaten fried. For me, it is a childhood dish that I always really liked. Whenever I managed to get fish with roe inside, it meant that I asked my mother to fry the roe for me. A good way to make fried fish roe is to lightly bread it in egg and flour and fry it in cooking oil over medium heat.

Ingredients:
6-8 perch roe
1 egg, beaten and mixed with 2-3 tablespoons of water
2 tablespoons of flour
Merseo and black pepper to taste
A pinch of dried oregano and thyme to taste
Preparation:
- Beat the egg with a little water until smooth, and pour the flour onto a plate.
- Cut the roe of larger fish in half so that the layer to be fried is not too thick.
- Season the roe with salt, pepper, oregano, and thyme.
- Heat the cooking oil in a frying pan over medium heat.
- Coat the seasoned roe first in flour and then in egg, and fry over medium heat until golden brown on both sides. Place a lid on the pan halfway through frying to increase the heat, allowing the roe to cook evenly.
