Zabaglione with fresh strawberries

Word Zabaglione, means originally „mixed“ in Italian language and the food dates back to the 15th century. In principle, this is a dessert from southern Italy which is made from whipped egg yolks flavored with either sweet sparkling wine, muscatel wine or, in a more original version, Italian Marsala wine. Zabaglione is served either with cookies or eaten without additives, or in this recipe with fresh fruit or strawberries. Strawberries also counteract the strong sweetness of the egg mixture.

Ingredients:
3 egg yolks
3 tablespoons sugar
A little vanilla sugar
2 tablespoons of Marsala wine or sweet sparkling wine

Preparation:
1. Cut strawberries into four or quarters and half-fill the cups or wine-glasses
2. Bring the water in the large pot to boil
3. Pour the egg yolks, sugar, and wine into a heatproof bowl
4. Place the bowl above the boiling water so that the bottom of the bowl is not directly contacted with water and the dessert is exposed to heated steam
5. Mix at medium speed for 5-8 minutes until the liquid egg mixture becomes egg foam and the blend blades begin to slightly line the surface of the foam.
6. Place egg foam onto strawberries (about 3-5 tablespoons per cup)
Serve immediately. If standing the egg mixture starts to stratify.
