Fish in crazy water (Pesce all’Acqua Pazza)

Simple food from the Naples region of Italy, which is both enjoyable, simple and takes very little time to cook. For the best result, I recommend using sea fish, sea bream, sea bass, but it can also be made with small trout and certainly perch or pike-perch from Estonian freshwater.

19.01.18 visiting Kerttu’s country cottage, I tried an unexpected version of this recipe and prepared it with a salmon fillet. The whole recipe was as usual but simply made with a salmon fillet and the result was unexpectedly delicious served with rosemary potatoes and parmesan asparagus. Serves: two

Ingredients:
Two fish, like a seabream
2 large cloves of garlic
8 cherry tomatoes
1 red chili
50 ml of white wine
Large handful of leaf parsley
For frying olive oil
Season with salt and freshly ground black pepper

Preparation:

1. Clean and rinse fish thoroughly with cold water
2. Half the cherry tomatoes
3. Slice the garlic, chop the chili
4. Heat olive oil in a pan (it is better to use a non-adherent pan or a well-working cast iron pan), place the fish in the pan
5. Fry the fish for 1 min in high heat, turn the fish on the other side, reduce the heat to medium
6 Add the garlic, cherry tomatoes and chili
7. Add white wine and, if more liquid is needed, a small amount of water
8. Season with salt and pepper, add parsley leaves
9. Cover the pan and allow to simmer over medium heat for 10 minutes.
Try using a fork to see if the fish is fully cooked. Ready to serve! We have eaten it with boiled potato fries, freshly made French fries and this food can be eaten with Italian bread
