Fried pikeperch with broccoli and celeriac puree
Pikeperch is one of the best freshwater fish available in Estonia. This fish has a clean and pleasant taste and is suitable for many dishes. One of the easiest ways to prepare a pikeperch is to fry it. Purchase a fillet of pikeperch with the skin on, cut it into the desired pieces, and fry it first on one side, then on the other side as well. A quick and easy dish that is good to serve with delicious green, broccoli and celery puree.

Ingredients:
One pikeperch fillet with skin, cut into four to six equal-sized pieces
200 g of broccoli
150 g of leeks
200 g of celeriac
Bunch of fresh parsley or parsley stalks that have a stronger flavor than the leaves
Black pepper and sea salt for seasoning
0.5 teaspoon of dried oregano to season the puree
200 g of champignons
1 tbsp light soy sauce
0.5 tsp Worchester sauce
Fresh dill for sprinkling on food
Preparation:
- Cut the broccoli into pieces, peel the celeriac and cut into pieces, chop the leek. Add a bunch of parsley. Put the vegetables in the cooking pot, add water so that the vegetables are covered, let it boil, and cook for about 15 minutes.
- Pour water less so that the water reaches about 1/3 of the height of the vegetable. Save the cooking water just in case. If the puree is too thick, add more water.
- Using a hand blender, mash the garden fruit until smooth. Add 2-3 tablespoons of olive oil and season with salt, black pepper and oregano.
- Cut the sirloin into four to six pieces, and lightly season with sea salt and black pepper.
- Heat the olive oil in a pan on medium heat and place the pieces of pikeperch fillet in the pan, skin side down. Fry for about 3 minutes turn the fish pieces over and fry for another 3 minutes.
- To fry the champignons, cut the mushrooms in half, heat a little cod liver oil in a pan, place the mushrooms in the pan, add soy sauce and Worchester sauce, and fry for about 3-5 minutes until the liquid evaporates and the mushrooms turn nicely brown. Season with salt and black pepper.
- Serve the food by placing the puree on the plate, placing the pieces of fried fish on the puree, and the fried mushrooms next to it.
Sprinkle with chopped fresh dill.
