Crispy cheese cookies with cornflakes
Crispy, salty, and very slightly spicy cookies, made with high-quality English Cheddar cheese and additionally flavored with English mustard. The cornflakes added during the preparation of the dough add even more crunch to the cookies.

Ingredients:
200 g room temperature butter
250 g wheat flour
450 g of Cheddar cheese
1 heaping teaspoon of English mustard
About 0.25 teaspoons of sea salt
Black pepper as desired
120 g cornflakes (Kellogg’s Corn Flakes, for example)
0.5 teaspoon of baking powder
Preparation:
- Mix butter, flour, baking powder, mustard, a little sea salt and black pepper, and cornflakes.
- Grate the cheese with a coarse grater and add to the dough mixture.
- Mix the dough until smooth. Do not knead the dough too much, it should be nice and soft and not tough.
- Shape the dough into balls about 2.5 cm in size and bake at 180 degrees C for 15 minutes.
- Let the cookies cool and store them in an airtight container.
