Colombian coconut rice
The coconut rice is prepared in many countries in Asia, Africa, and South America. Leydi Carolina told us about Columbian homemade recipes. One food that reminds home to Carolina, is the coconut rice. We asked him to prepare it in Icosagen and in 2018, on the birthday of Rad, she did it. According to Wikipedia, the arroz con coco is typical of Colombian side dish, especially for fish.
We arranged work so that I made fish in tomato-onion sauce and Carolina made a coconut rice.
Preparing of this food is very special including the selection of the high-quality coconut, breaking the coconut, steaming the coconut milk, making crispy coconut and rice boiling. Rice has Coca-Cola as one of the ingredients. The result was very tasty indeed. I am strongly recommending to make it at home. Also, I strongly recommend that you do not use canned coconut milk but just do it exactly as it is made in Colombia and as Carolina did it.

Ingredients:
1 fresh coconut
200 g long grain white rice
1 can of Coca-Cola
Salt to taste
Preparation:
1. Open the coconut by screwdriver from the three places where the nut is attached to its shell and which is clearly visible at the top of the nut.
2. Pour coconut water out and drink it, it’s delicious
3. Go to the street or place with stone floor and throw the coconut in pieces. Remove the coconut inner flesh from the shell, cut into a few centimeters peace and place the food processor.
4. Add half a glass of water and crush for a few minutes into small pieces
5. Filter the liquid (coconut milk) through a fine sieve and use it for further food preparation. Crushed coconut flesh can be used for the making of coconut biscuits.
6. Pour the coconut milk into the pot and boil in medium heat until the water evaporates. No need to mix, the bottom layer is what’s finally needed
7. When the water is evaporated, the layer in the bottom of the pot begins to brownish. Scrape the layer off with a spoon. During subsequent heating, coconut oil is released and the layer turns brown and crispy.
8. If the crisp becomes brown, add rice and mix well. Let it light brown for a minute.
9. Add 1 cup of water and 1 cup of Coca-Cola. Season lightly with salt. Stir and boil under the lid in low temperature until the rice is soft and water absorbed.
Serve with fish.
