An egg in a basket
This is a food that probably most Estonians know as the Birmingham egg. As much as I’ve searched, I haven’t been able to find any connection to this dish with Birmingham. In other parts of the world, this food is known by many names, from “eggs in a basket” to “pirate eye”.
Be that as it may with the name, in any case, for me it is a nostalgic childhood dish, which is a very tasty and hearty breakfast. It would be ideal to make it with good quality bread, for example, some type of sourdough farm bread, from which a sturdy slice is cut, a 4-5 cm piece is cut out from the middle so that a hole is formed in the middle of the bread slice. The bread is fried and an egg is placed in the middle so that the egg yolk remains intact. In this way, the bread is fried together with the egg on both sides until the egg reaches the desired level of doneness.

Serves: two
Ingredients:
Two to four slices of bread about 2.5 cm thick
Two or four larger eggs
2-3 tablespoons cooking oil for frying
Sea salt and black pepper to taste.
If desired, tomatoes, green salad, and herbs for serving.
Preparation:
- Cut slices about 2.5 cm thick from the dough
- Cut a 4-5 cm hole in the middle of each slice.
- Heat cooking oil in a pan to medium heat, place the bread slices in the pan with oil.
- Drop one egg into the hole cut in each loaf. Fry the bread and egg for about 1.5 minutes.
- Carefully turn the egg over so that the egg does not break.
- Fry the bread and egg on the other side as well.
- Transfer to a plate, add salad, herbs, and tomato slices if desired.
Serve immediately.
