Coconut biscuits
Preparing biscuits using fresh coconut gives to this dessert completely different level. You can use leftovers from the preparation of Columbian coconut rice as I did or start from fresh coconut crushing it with the food processor. Good dessert for those loving taste of fresh coconut.
Preparation time: 20 min preparation, 30 min baking

Serves: 20 biscuits
Ingredients:
1 fresh coconut
50 g butter (I used dairy-free butter)
75 g flour, gluten-free or wheat flour
0,5 tsp vanilla sugar
100 g sugar
Preparation:
1. Using food processor chop the coconut or use leftovers of Columbian rice
2. Head the oven to 200 degrees C.
2. Mix all ingredients to the dough, make balls in diameter of 3-4 cm and bake in 200 degrees until biscuits will be slightly brownish.
Enjoy with cold milk, coffee or tea.
