Atlantic herring rolls
A recipe made in our family for as long as I can remember. Pleasant, slightly sour, slightly spicy cooked fish rolls, which are suitable for a party table as well as a daily side dish.

Serves: four to six
Ingredients:
250-300 g Atlantic herring fillets
100 ml cooking oil (sunflower seed oil suits well)
200 g tomato puree
2 tablespoons tomato paste
2-3 medium onions sliced
3 tablespoons 30% storing vinegar
1 tablespoon sugar
Salt and black pepper
Preparation:
1. Season the herring fillets with salt and pepper, turn into the rolls, and put in the bottom of the thick-bottomed cooking pan. Between the fish roll layers place onion slices.
2. Mix the oil, tomato puree and tomato paste and vinegar, season with salt and pepper, and pour into the rolls.
3. Simmer over very low heat for about 30 minutes until the rolls are soft. Store the rolls in the refrigerator. The rolls are good when fresh, but they get even better when standing a while.
Serve with baked potatoes, fried potatoes, or bread.
