Torta Caprese, almond chocolate cake
Torta Caprese is a traditional Italian chocolate cake made with either walnut or almond flour. Like many Italian recipes, it is simple but very tasty and not difficult to prepare. Similar to many other recipes, it is said to have been born through a baking mistake, where the wheat flour was forgotten to be incorporated into the cake, resulting in a cake that has been served on the island of Capri and the Naples region for a hundred years since the 1920s. This cake takes all the ingredients except the egg in equal quantities, so it is especially easy to make it bigger or smaller if necessary.

Ingredients:
200 g butter
200 g of almond flour
200 g of dark chocolate
200 g of sugar
5 eggs for this amount
To serve icing sugar and berries, if desired, a layer of chocolate can be covered with berries, this requires an additional 50 g of dark chocolate
Preparation:
1. Melt the butter and chocolate, mix in the sugar and almond flour. When the mixture is cool enough, separate the e ggs to make the egg white foam. Add egg yolks and mix.
2. Whisk the egg whites into a strong foam and mix with a spoon to the dough
3. Pour into a baking sheet lined with parchment paper and bake at 160 degrees for about 40 minutes
4. Allow the cake to cool, if you want to create chocolate spots under the berries, melt the chocolate on low heat, grease the cake as desired and cover the chocolate with the berries.
5. Shake over icing sugar and serve with delicious Italian coffee.
