Chilli Con Carne
Chilli Con Carne, or chilli with meat, is food dating back to the 1850s, made by working-class people of Mexican origin in southern Texas. It is a spicy stew that contains chilli, beans, tomatoes, sometimes other vegetables and meat. It can be cooked without meat and it is so delicious. According to the original recipes, a mixture of dried beef, chilli pepper, salt, and animal fat was prepared, which was easy to store and, when necessary, easy to make a meal. Chilli Con Carne is an official food of the state of Texas since 1977. Currently, dozens of chilli variations, vegetarian chilli, green chilli, white chilli without tomato, etc. have been invented. It is a food that can be made in quantities, frozen and kept for a long period without a significant change in taste.

Ingredients:
2 large onions finely chopped
4 garlic cloves finely chopped
2 larger carrots roughly grated
2 celery stalks chopped
3 red bell peppers
3 red chilies finely chopped
500 g of high quality minced meat
Two 400ml canned beans, red, black, white – as desired
If desired, 400ml jar of chickpeas can be added (optional)
Two 400ml canned chopped tomatoes
Chilli powder may be added is more sharpness is needed
1 teaspoon ground cumin
0.5 teaspoons ground cinnamon
For frying 2-3 tbs olive oil
Salt and black pepper for seasoning
Preparation:
1. Chop vegetables, onions, and garlic
2. Heat a few tablespoons of oil in a thick based saucepan and fry the minced meat in high heat. Add the onion and garlic, fry for a few minutes
3. Add cumin, cinnamon and chilly, fry for a few minutes
4. Add the vegetables and canned tomatoes and simmer for about an hour on low heat.
5. Add beans and chickpeas if desired, simmer for another half hour, season with salt and pepper
Serve with guacamole and sour cream. It can be eaten with rice. Alternatively, the ready-made Chili Con Carne can be used for the preparation of a separate meal. Place tortilla chips into oven molds, cover with Chilli Con Carne or put into a mixture of tortilla chips, and bake in the oven. Serve with rice or sour cream.
