Nende k\u00fcpsiste valmistamist on dateeritud juba 17 sajandisse. Sable t\u00e4hendab Prantsuse keeles liiva ja k\u00fcpsiste teraline tekstuur on tagatud hulga munarebude, jahu ja kvaliteetse v\u00f5i kasutamisest. Neid k\u00fcpsiseid valmistati arvatavasti esmakordselt Sabl\u00e9-sur-Sarthe\u2019is, mis on tuntud ona k\u00f5rgekvaliteedilise soolase v\u00f5i poolest. Mina valmistasin k\u00fcpsiseid tavalise taluv\u00f5iga, lisades meresoola k\u00fcpsistele kergelt soolase n\u00fcansi andmiseks.
